White Bean and Chicken ChiliWhite Bean and Chicken Chili

  • 2.5 cups Water
  • 1 t Lemon pepper
  • 1 t Whole cumin seeds
  • 1.5 lbs Boneless, skinless chicken breast
  • 3 T Vegetable oil
  • 1 clove Minced garlic
  • 1 cup Chopped onions
  • 18 oz Canned corn white or yellow or both
  • 8 oz Diced green chilies
  • 1 t Ground cumin
  • 3 T Lime juice
  • 1 t Salt
  • 30 oz Great northern beans (drained)
  • Tortilla chips, Shredded Jack Cheese, Sour Cream, Fresh cilantro, Salsa

InstructionsInstructions  1. Combine water, lemon pepper and whole cumin seeds in a pan and bring to a boil
2. Cut chicken pieces into large bite size chunks
3. Add chicken and reduce heat to a simmer- cover and cook for 15 minutes or until chicken is done.
4. In a skillet, heat vegetable oil and fry garlic and onions until onions are tender.
5. Add the garlic and onion mixture to the chicken along with the corn, chilies, ground cumin, lime juice, salt and drained beans.
6. Bring to a boil, then simmer for 5 minutes- all done.

To serve, place a few crushed tortilla chips in the bottom of the bowl, add soup, shredded cheese, salsa, sour cream, and cilantro.
